Using What I Have Journal Entry #24: Pistachio Chocolates
Sometimes, I really want something fancy. And if you're in a low spend month, you have to get creative with fanciness. Presentation matters--a lot!
I'd saved some of the deli containers from the catering I'd adopted and washed them out. I think this was the one the olives came in. And I had some little paper cups. So why not make myself a little box of chocolates?
The inside of these chocolates consists of some cookie crumbs left over from a box of vegan vanilla wafers (Partake), the very end of a bag of non-dairy white chocolate (Pascha, the only really good vegan white chocolate), and some pistachio butter. After freezing the balls of cookie-white chocolate-pistachio butter, I dipped them in melted dark chocolate and immediately sprinkled on some chopped pistachios.
If I bought the ingredients for this, it would not be cheap, to be fair. I'm not saying this brand of frugality is exactly what you should do. I will note that a similar thing could be made very deliciously with something like cheap vanilla sandwich cookies and peanut butter that you then coat in dark chocolate and sprinkle with peanuts, though. The point isn't that this is cheap food. The point is that I'm not buying anything I don't need to buy.
I faced down what I had and made something amazing. We'll see if I'm still having fun by the end of October, but right now things are going great!
