Small Plate #16
You saw Third Bread yesterday; well, here's how I used some of it! I had a slice with vegan butter with a veggie-rice casserole I made with my leftover broccoli soup, a Gardein ultimate fishless filet, and some homemade tartar sauce.
I probably needed a bigger plate but I'd already gotten started.
There are tons of veggies here, though it doesn't look it. Not only is the casserole's binder made from a veggie soup that blended down broccoli, carrots, onions, celery, and garlic, the casserole itself has a mixture of things from my fridge and freezer (more onions, celery, carrots, and broccoli, but also cauliflower and mushrooms). It's at least half rice, half veggies as a ratio. The flavor didn't turn out as cheesy as I hoped so I tossed in a handful of Daiya cheddar and it was perfect. I topped it with some crushed cracker crumbs I mixed with vegan butter, and that was also delicious.
I bought the fishless filets a long time ago and they've just been languishing in my freezer, so now was as good a time as any to use them. These filets are excellent with some tartar sauce.
My favorite part of this meal, though, was probably the bread. It's so unusual and so very good!
Another day of being frugal, and another day of that being fine. I'm telling you, getting to use the oven makes all the difference when I'm being a cheapskate!
