Laptop Lunches #89

Ham and noodle casserole, orange grape tomatoes and halved snow peas with spinach avocado dip, fruit salad (strawberries, pineapple, kiwi, and blackberries), and some homemade pineapple upside down cake.

The casserole is from the Fannie Farmer Cookbook. It really did not turn out like I expected, but it tasted really good--a very unique flavor; sort of noodles and ham in a sour cream custard.

The cake is from America's Test Kitchen Cooking for Two 2010. I learned a lesson that I guess should have been obvious: do not make pineapple upside down cake in a springform pan. All that buttery brown sugar goodness leaked away; it was kind of disappointing. Oh, well.
