Temari Rabbit 2-Tier Bento #64

Tuesday's arugula salad with lemon dressing was so delightful I had it again today, this time with a hard boiled egg (salted and peppered), beet hummus, and peppery water crackers.

No fruit, but you know...blizzards have a way of limiting one's food choices.

Tomorrow, our lunch will be provided at work, so you'll see me again on Monday.

KOSOX 2-Tier Sushi Box #6

Kiwi slices, blood orange slices, coconut-chocolate covered almonds, and ham/cream cheese/arugula/tortilla pinwheels.

Some of the pinwheels didn't want to hold together, so I used my relatively new food picks. I love how practical they were in this case, although the cutesy veggie picks also sort of make me self-conscious in the lunchroom.

Temari Rabbit 2-Tier Bento #63

Salad of arugula, sliced mini roma tomatoes, red onion, and Romano cheese; a little cup of homemade lemon dressing; homemade mini shepherd's pie; and blood orange slices (that I forgot were blood orange and had thought were regular oranges, which was fine because as blood oranges go this was disappointingly not-vivid).

This salad was surprisingly wonderful. So was the shepherd's pie. I'd never made either and I succeeded beyond my wildest imaginings. As for the shepherd's pie, it gets bonus points for using previously cooked and frozen ground lamb from another meal some time ago.

The dressing goes really well with arugula, and it's so simple. So here you go:

Lemon Dressing

Equal parts olive oil and lemon juice (about 1/2 tablespoon or so each for a single serving)
Salt and pepper to taste

Mix all this stuff up. Taste and adjust seasonings.

Sour cream, a beef tamale, carrot sticks, avocado chunks with sliced mini roma tomatoes, and coconut-chocolate covered almonds.

Though I don't usually count it as such, nutritionally, avocado can pull fruit duty.

Happy Jackson Snack Boxes #1

The good thing that came out of the disaster that was yesterday's sushi was this simple lunch based on the leftover sushi rice (appropriately packed in the yellow "Yay! Leftovers!" box): said rice with salmon furikake, soy/mirin glazed meatballs, blanched broccoli, and a little cup of fruit (plummelo and blackberries). I didn't notice the dot of furikake on my meatball until lunchtime, but that's okay.

This was super easy but tasted wonderfully homemade, which it mostly was.

You've seen most of the Happy Jackson set I bought in Pack-a-Snack posts, but in this case it made the most sense to use it for this meal.

KOSOX 2-Tier Sushi Box #5

Raspberries on silicone lettuce leaves, a bear of soy sauce mixed with rice vinegar, and spiced tuna sushi.

Or at least, some horrible approximation of spiced tuna sushi that tasted ever so much better than its disastrous appearance would lead you to believe. But I do not blame myself. I blame the Bumblebee tuna package for suggesting this to me.

Temari Rabbit 2-Tier Bento #61

Plummelo chunks, blackberries, raspberries, peanut butter filled caramel candies, Japanese-style potato salad, beet hummus, and peppery water crackers.

This was a rather odd lunch, but it did the job. It would have been better if the cucumber in the salad had shown up as more green, or maybe I should have added a kiwi or something. But anyway. The beet hummus was new, and quite lovely, which was no surprise as I like both hummus and beets.

This particular potato salad isn't properly Japanese, because I just used a very mayonnaise-heavy deli potato salad (on clearance for 75% off) and added the salted cucumbers and boiled carrot slices. But I do think it upped the nutritional value, anyway.

ECO Lunchbox Three-in-One #26

Salad of romaine, leftover baked salmon, grape tomatoes, red onion, and mini bell pepper rings; yogurt ranch and "Bac'n Pieces" for topping; blackberries; raspberries; and chunks of plummelo.

A curious thing happened at the grocery store: after passing by the fake bacon salad topping for who knows how many times before and wondering about it, I bought the stuff. It's vegetarian, which amuses me to no end. It's just textured soy protein with color and some kind of mysterious flavoring. (No, this is not typically the direction I go in. But...anyway.) It's actually quite nice in salad--crunchy and vaguely meaty. I wouldn't buy it all the time--and actually, now I wonder how I will get through a whole jar--but it's a nice change of pace from croutons. And for those of you for whom it matters, it's also gluten free.

It brought to mind something that might have been a false memory--a commercial that played in my childhood with people eating these little soy nuggets on salad and potatoes and things--so I went looking. This isn't quite what I remember, but I do remember this one:



Maybe I can crowd source this. Was there an ad where people took bites and then exclaimed, "Oh!" as if it was the greatest idea ever?

3-Tier Bottle Bento #18

Because I have no mental energy for actual cooking, here we have some deli macaroni salad with some ham cubes in it for protein; some plummelo chunks and blackberries; and cucumbers, orange bell pepper strips, and grape tomatoes with a little cup of yogurt ranch.
It's workable. And the macaroni salad was on sale for 84 cents for a pound, which is pretty good for something I didn't have to cook myself.

Insulated Jar & Sides #2

Sauteed bell peppers and onions, boiled shrimp, pasta pilaf, cucumber slices, and a little cup of mixed dried berries.

The pasta pilaf was on the back of a box of pastina (little star shapes in this case). It was pretty wonderful, so I'll have to try it again--and because I can't resist, tweak it a little to see if I can make it my own. It would not be very good to eat it cold.

In this case, the jar didn't really keep it hot, just slightly warmer than a plain old plastic container. I think this jar really only keeps liquids warm. So I'll keep looking for a good hot lunch solution.

3-Tier Bottle Bento #17

Guys! HAPPY NEW YEAR! I was off work a bit, and then there was food poisoning, so...not really wanting to think about lunch. But here I am! At least for today. Tomorrow, etc. if I can get my act together.

Baked beans, a stuffed egg (paprika mix), and potato salad made from a mixture of purple and red-skinned potatoes garnished with some Persian cucumber slices.

I don't actually recommend making potato salad with purple potatoes; it's weird. But it tasted like potato salad usually does, and it is an interesting color, and they were what I had around.

I knew when I packed this I would be eating cold beans, but somehow I didn't mind. And that I didn't have fruit, but that, in this case, couldn't be helped. (You're looking at a bit of a scrounge for lunch here.) This was actually really satisfying. I've always loved these things at picnics, and what is a packed lunch if not a picnic for one?

3-Tier Bottle Bento #16

Danish pancakes; eggs scrambled with spinach, tomato, and ham; pummelo chunks, and a cup of maple syrup for dipping the pancakes into. Danish pancakes do not technically go with maple syrup, but it seemed like a good idea to me. In general, it was. Just watch the dripping.

Temari Rabbit 2-Tier Bento #59

Chocolates, chunks of pummelo, mini pretzel thins, baby carrots, cucumber slices, and spicy yellow lentil hummus.

They weren't kidding when they said the hummus was spicy! That stuff will really clear the sinuses. But it did taste pretty good. I've tagged this vegan because aside from the chocolates it is, so if you're looking for a vegan lunch idea you could do this pretty easily. Just get vegan chocolates.

Not a lunch, from a day lunch was provided at work (but scheduled to be provided at 2:00 PM): a mini bag of microwave popcorn and instant caramel apple cider. I haven't been to the store in a while, and this was shelf-stable. Not everything can be bells and whistles everywhere.
