Temari Rabbit 2-Tier Bento #63
Salad of arugula, sliced mini roma tomatoes, red onion, and Romano cheese; a little cup of homemade lemon dressing; homemade mini shepherd's pie; and blood orange slices (that I forgot were blood orange and had thought were regular oranges, which was fine because as blood oranges go this was disappointingly not-vivid).
This salad was surprisingly wonderful. So was the shepherd's pie. I'd never made either and I succeeded beyond my wildest imaginings. As for the shepherd's pie, it gets bonus points for using previously cooked and frozen ground lamb from another meal some time ago.
The dressing goes really well with arugula, and it's so simple. So here you go:
Lemon Dressing
Equal parts olive oil and lemon juice (about 1/2 tablespoon or so each for a single serving)
Salt and pepper to taste
Mix all this stuff up. Taste and adjust seasonings.
