Sakura 3-Tier Bento #25

Red cherries, raspberries stuffed with white chocolate chips, Rainier cherries, some cucumber slices tossed with rice vinegar and sesame seeds, cherry tomatoes, wedges of scallion pancake, a bottle of soy sauce, and marinated tofu.

I have to say, stuffing raspberries with things is really helping me to get used to the taste of them! White chocolate is pretty fun, too. I've tagged this vegan, although I'm not sure my white chocolate chips actually are. It would be very easy to do this lunch as a vegan version, if my white chocolate chips don't actually fit that bill.

Temari Rabbit 2-Tier Bento #31

Rainier cherries, blackberries, green seedless grapes, cut in half, raspberries stuffed with white chocolate chips, rice with some nori crumbled on top, leftover popcorn shrimp, and steamed broccoli.

Otherwise known as: I got to go to the store! And also, fresh Rainier cherries are available! My shopping trips are heavy on the very perishable right now, because of the upcoming move, so I may have overdone it in the produce section, but it made me happy.

Pack-a-Snack #43

Today's snack, in a new 4 oz. container I found somewhere recently, is one of my favorite little simple things: coconut yogurt with chocolate chips.

Laptop Lunches #260

Baby carrots, bell pepper strips, a marinated mushroom, yogurt ranch dressing, blackberries, applesauce, and mini cheese sandwich crackers.

I will be so happy to get to go grocery shopping this weekend! Enjoy yourselves, whatever it is you'll be doing. I have more clearing-out to do, myself.

Traveler's Lunches #3

I know, I know. This is a kind of drastic change of pace. But I went to New York for a business meeting, and didn't pack a lunch. And yet I felt compelled to show this to you, because I visited one of the most intriguing restaurants I've ever been to! It's kind of the same premise as Chipotle--you choose how you want your food presented (this is a "feast," but you can get salads or rice bowls or even a sort of taco thing), and then you choose from different categories of item--only it's Indian food rather than Tex-Mex. You do not see the garlic naan in this shot, but it was really lovely bread. I didn't finish it and wrapped it up and stuck it in my purse, where I promptly forgot about it, so now my purse kind of smells of garlic...but oh, well. The little fishy flag lets you know that I was having fish curry with my "feast." It was a bit on the spicy side even though I asked for it to be mild, and the staff was kind of pushy to get you to leave if you stopped eating for even a nanosecond (hello, New York), but as dining alone in the city goes, it wasn't half bad.

Sakura 3-Tier Bento #24

Fruit salad (same stuff as yesterday), ham and dilly bean bundles, garlic hummus, mini cheese sandwich crackers, and baby carrots.

ECO Lunch Box Three-in-One #7

Fruit salad (strawberries, blackberries, and nectarine chunks), sour cream, mixed heirloom tomatoes, avocado chunks, and some sort of Mexican-fusion chicken pizza thing on a corn masa crust.

This was essentially a deconstructed tamale. It was good because I do like tamales, but the only thing really pizza-like about it was its shape.

By the way: the reason you're seeing so much reliance on prepared foods here lately is that I'm moving in a few weeks! I'm excitted to be getting a real kitchen again rather than the terrible little mini version against one wall of my current disastrous apartment. (So many stories I could tell...and every lunch you've ever seen was prepared in a kitchen that has the equivalent counter space of the cutting board you see every day.) Anyway, I've had little energy for proper cooking, as I've been busy going through all my worldly possessions and getting rid of a fair chunk of them. Next time I go to the store, I'll get easier food to prep from scratch so I live less out of the freezer, but at least I've got one tier here entirely out of fresh food, and I think as frozen food goes, this isn't terrible.

Skater Lunch Box #4

Some chicken pot pie ravioli with a simple butter sauce (so simple it is likely invisible) and a silicone cup of berries.

Trader Joe's makes the chicken pot pie ravioli--a fun change of pace, but I think somehow I'd rather have mini chicken pot pie itself. Pasta isn't quite the same as a crust. Still, these were pretty yummy.

Pack-a-Snack #43

Slices of nectarine and a few coconut chocolates in my two small Lunchopolis container.

Sakura 3-Tier Bento #23

Chunks of white nectarine with blackberries, yellow bell pepper strips, baby carrots, heirloom tomatoes, ham/cream cheese/veggie/tortilla pinwheels, and hummus.

Temari Rabbit 2-Tier Bento #30

Blackberries, strawberry chunks, avocado with yellow tomato, brioche toast, and smoked trout spread.

This week is sort of variations on a theme, I guess, but I don't have many creative juices lately.

Temari Rabbit 2-Tier Bento #29

Strawberry chunks, blackberries, a chocolate/quinoa snack, orzo rice pilaf, broiled salmon, and heirloom tomatoes.

It must be a fishy week for me or something! But I enjoyed this. My only regret is that I forgot to buy cucumbers, so I have nothing green here other than the dark streaks in the heirloom tomato, but you can't have everything.

Laptop Lunches #259

Avocado chunks tossed with yellow tomatoes and salt and pepper, some berry-flavored Bel-Vita biscuits, orange cream flavored yogurt, and strawberry chunks.

Oddly, this worked pretty well.

Temari Rabbit 2-Tier Bento #28

Brioche toast, smoked trout, cream cheese with chives, baby carrots, blackberries, two yellow cherry tomatoes, and strawberry slices.

I never had smoked trout before. It seemed a little pricey just to try, assuming perhaps it wouldn't be that great. But it was so worth it. Smoked trout is the ham of the fish world, I think. The flavor, nice and smoky, reminded me very much of a good Virginia ham, though the texture (obviously) is more fishy.

Pack-a-Snack #42

Half a tangerine and some tropical trail mix in my small Lunchopolis container with an mini oval silicone baking cup.

Much as I enjoyed the tangerines, I'm glad this is the last of them!

Temari Rabbit 2-Tier Bento #27

Tangerine halves and fried rice.

I love fried rice, and it's so great to have at the end of Week 2 of Not Going to the Store, but for some reason I rarely have it. I am an enigma.

Thursday, June 11, 2015

Temari Rabbit 2-Tier Bento #26

Tangerine halves, sugar snap peas, marinated mushrooms, and pinwheels of veggie cream cheese and chopped ham.

A little boring, but it did the job.

Wednesday, June 10, 2015

Sakura 3-Tier Bento #22

A cup of chocolate covered pomegranate seeds, a halved tangerine, baby carrots, cucumber slices, a cheese stick cut in pieces, garlic peas, garlic hummus topped with chopped ham, and mini rice crackers.

This was a lot of different things. I liked the way the ham worked with the hummus. Altogether, mostly a successful lunch.

Tuesday, June 9, 2015

Laptop Lunches #258

Honeycrisp apple slices, some squares of toast, cucumber slices, baby carrots, cherry tomatoes, yogurt ranch for dipping, and chicken salad on a bed of romaine lettuce.

I had planned on crackers, but the crackers I had didn't fit in this box, and I was in a hurry. Hence, toast squares.

Monday, June 8, 2015

Sakura 3-Tier Bento #21

Tangerine halves, a bit of maple candy, cherry tomatoes, cucumber slices, baby carrots, a cup of spicy dip, and leftover potato salad mixed with some cubes of ham, with some chives for color.

Saturday, June 6, 2015

Pack-a-snack #41

A bit of cheesecake in one of my small Lunchopolis containers. Best snack ever!

Friday, June 5, 2015

Temari Rabbit 2-Tier Bento #25

Water crackers, halves of tangerine, and a mixture of cottage cheese, cherry tomatoes, and cucumbers with salt and pepper.

It doesn't look like much, but it tasted wonderful.

Temari Rabbit Bento Bowl #6

A mini stuffed pepper surrounded by mashed potatoes and some sliced apple.

I think I overcooked my stuffed peppers, but that's all right--they were fantastic anyway!

Monday, June 1, 2015

Sakura 3-Tier Bento #20

Orange chunks, a chocolate truffle, mango chunks, tortilla/peanut butter/apple pinwheels, baby carrots, hummus, and cucumber slices. Easy and practically vegan--because it would be if that were a vegan truffle, I've tagged it as such.

My Ph.D. graduation is tomorrow and I'm taking a few days off, so you'll see fewer lunches this week. I've had the diploma for six months, but there is only one ceremony per year. It's a funny feeling putting on a hat with a tassel for the last time. I expected something quite different from my career when I started this journey years ago. But even though the job I have now doesn't warrant regular appearances in funny hats, I still accomplished something, I think, so I'm going to go.
