Laptop Lunches #266

Orange slices, veggie rice crackers, cucumber-tomato salad with basil vinaigrette, and a hard boiled egg, halved and peppered.

These veggie rice crackers are really flavorful. A lot of rice crackers need something else with them to be worth eating, but these carry it through on their own. This was a really nice lunch.

Pack-a-Snack #67

It had been far too long since I did the checkerboard snack in my medium sized Lunchopolis container! And I had enough odds and ends to make it make sense today.

Blackberries, cheddar squares, chickpea crackers, a strawberry, a mini chicken cordon blue nugget, and avocado chunks with salt and pepper.

As snacks go, there is hardly anything one could do to improve on this.

Lunchopolis #14

Strawberry, kale, and avocado salad with homemade bacon-poppy seed dressing (recipe here); cheddar and swiss squares; and chickpea crackers.

This salad seemed ridiculously trendy--it hit all the absurd high points of our cultural moment, including bacon and kale obsessions--but it was really, really good. I think this is my first experience with a kale salad, because kale is usually so ridiculously expensive, but as I said on Monday, this is the result of an amazing produce sale.

The crackers are new. They taste more or less like wheat thins, which makes sense, because they do have wheat in them.

Happy Jackson Snack Boxes #4

You might be thinking those are chicken nuggets, but that's only partly true. They're mini chicken cordon blue nuggets! I couldn't help but try them when I saw them, and they are actually really great. They're nestled in with buttered egg noodles and glazed carrots with a strawberry-spinach salad using this dressing leftover from yesterday.

ToGoWare 2-Tier Tiffin #3

Strawberry spinach salad with a sesame-poppy seed dressing in a Tupperware midget (recipe here), swiss cheese squares, everything bread sticks, and slices of deli turkey.

You'll see a lot of greens from me soon--HUGE sale in the produce section. And thus, a tiffin. (Yes, I've packed the tiffin more than you've seen it, but I don't get as much use out of the gigantic thing than out of my smaller containers.)

The salad was lovely. The bread sticks were some kind of high fiber thing and tasted really weird, but they were okay wrapped in turkey.

There is some kind of irony or something in the fact that I forgot that I have a metal dressing/dip cup that goes with the tiffin. Oh, well. The Tupperware worked out fine.

Mixed microgreen and beet salad with a homemade vinaigrette, cherries, kumquats, a hard boiled egg, and chunks of ham steak.

I wanted to like microgreens, but this was more or less like I'd imagine eating a big bowl of grass would be. The beets helped, though. And it is a lot like clover. Happy St. Patrick's Day!

Insulated Jar & Sides #6

My hiatus was unplanned, but not to worry--you'll have lunches on the usual schedule this week.

Jalapeno chicken sausage sauteed with peppers and mushrooms, cheese grits, and a fruit salad of sorts (kiwi, pomegranate arils, and orange chunks).

This was my first time making grits. They cover much of the same ground that polenta does without that whole half-hour of stirring business. The insulated jar didn't really keep them hot, but it didn't matter--they were pretty great anyway.
