Pack-a-Snack #40

There is nothing earth shattering about this, and I almost didn't post it because it is really pretty uninspired. But what the heck.

Scallion soda crackers with slices of aged cheddar in a recycled pesto container. If you're looking to be frugal and/or avoid waste, you go this route rather than the boxed snack route.

Pack-a-Snack #39

When I was in Vermont, I bought these maple oat biscuits and strawberry rhubarb jam, among other things. I thought, hey, I'll just try these oat biscuit things, and only bought one package.

Buy more than that if you have the chance! I can't find oat biscuits outside New England, apparently, and I so wish I had more...they have a quality that somehow resides between sweet and savory, and goes equally well with both cheese and jam. Now I'll have to settle for ordering Effie's Oatcakes on occasion from Amazon if the cravings get too strong. Or go to Vermont again.

Probably go to Vermont again...

Oh, and the jam is lovely.

Skater Lunch Box #2

Last night I did manage to cook a really lovely salmon filet...and ate it all so I had none leftover for today. So instead I boiled some frozen chicken-cilantro mini wontons, put some soy sauce in a bottle, threw in the leftover broccoli (my appetite apparently didn't have the same impulse to eat all the broccoli), and added a silicone cup of mango chunks for good measure.

This meant I could take the bottle and the mango out for the rest to get a quick zap in the microwave at work with the silicone lid to the Skater box. It worked super well!

Maybe I'll get a grip on myself next week. Maybe not. Maybe it's irrelevant!

Laptop Lunches #257

A month without my trusty Laptop Lunch box? How did that happen!?

Simple salad of romaine, cucumber, tomato, croutons on the side so they don't get soggy, and yogurt ranch dressing (in the cup); a rather redundant caramel-flavored yogurt, orange chunks, and cherries.

Apparently I still don't want to cook.

Temari Rabbit 2-Tier Bento #24

Lettuce and cream cheese tortilla pinwheels, avocado tossed with grape tomato chunks, cherries, a packet of Chinese peanut cakes, and orange slices.

I'm a little resistant to cooking in the evenings this week, it seems, so my lunches are short on leftovers and my dinners are quite weird. Ah, the joys of cooking for one. At least I'm still getting a somewhat reasonable balance in the diet! And fresh cherries are available again, which is pretty exciting.

Chicken salad and the like works better for lettuce wraps, but you can't have everything.

Temari Rabbit 2-Tier Bento #23

Couscous salad with avocado, tomato, and leftover pork; orange slices; cherries; and a cup of chocolate-covered pomegranate seeds.

Pork is hard to know how to cook. I'm still not great at it. But this pork chop actually did make a pretty good salad cut up and tossed with other stuff and last night's leftover couscous, so it came out okay.

Temari Rabbit 2-Tier Bento #22

Water crackers, some chicken spread mixed with cream cheese, marinated mushrooms, orange chunks, and a stuffed egg (chives mix) sitting on a silicone leaf to stop it from getting orange juice on it.

The silicone leaf did its job, which I was pleased about. Mixing the chicken spread with cream cheese also helped. The mushrooms were a little more pickle-like than I think I expected, but good. All around, I think, a successful lunch for the grocery store-avoidant.

By the way, the chives in the egg were the dried kind, which I'd never tried before. They aren't quite as good as the real thing, but a good substitute for those of us who can't get through a whole bunch of chives.

Apple slices, a silicone cup of cheese curds, a hard boiled egg, cucumber spears, baby carrots, a spinach knish, and hummus.

This is the lunch of someone refusing to go to the store because she bought too much cheese and jam and maple syrup on vacation, but it's working out. Work-related lunch picnics take up the next couple of days, anyway. See you guys again on Friday!

The chicken spread is weird. I need to see if I can help it out with some cream cheese or something, and I won't be buying the stuff again. Sometimes trying new things works; sometimes it makes it just edible.

Temari Rabbit 2-Tier Bento #20

I was in a bit of a hurry this morning, so this picture isn't all I might hope. Oh, well!

Grapes, pineapple chunks, mini spinach knishes, halved cherry tomatoes, and fresh cheddar cheese curds.

Although it is impossible to get fresh cheese curds like this unless you are very near a cheese factory, it is worth the effort to go get them. Trust me. Find you some cheese curds. They are a tooth-squeaking experience worth every bite. My co-workers agree.

You'll also see a bit of my silicone baran peeking up between the curds and tomatoes. I have very few reasons to use them most of the time, because my lunch boxes do the trick, in general, but this time it made sense to me. But you totally do not need silicone baran; I could probably just as easily have used one of my many shapes of muffin cup. It just wouldn't have had yellow and green stripes, and then where would we be?

Adventures in Vermont

As I had said in a previous post, I was having adventures on my birthday last week. Here's a bit of it for you: do you know what this is?

This is where your maple syrup and maple sugar, etc. come from! I was really impressed by this little farm, and I guess since I came away with a bunch of maple stuff, I need to incorporate some of it into my meals soon. Any ideas for maple cream?

Several other photos didn't turn out too well, but I also visited a cheese factory on my birthday. Trust me, you'll see some cheese!

Pineapple chunks (a whole pineapple is a saga if you live alone...), blackberries, Calrose rice, asparagus, a few meatballs, some eggs and tomatoes, and broccoli to fill in the holes.

This looks messier than intended, but I really enjoyed eating it.
