What I Ate in a Day #37
Two full days of eating in a row? Well...yes. I'm in a weird place right now; humor me.
This was a day I was working from home, so no need for a packed lunch.
Here we have a breakfast of a bagel spread with crunchy peanut butter, a grain coffee au lait (with soy milk), and an improvisational green tofu breakfast pudding with pineapple. This pudding and pineapple thing was mostly to use up ingredients in my fridge, and it isn't yet something where I'd give a recipe for it, but it consisted of silken tofu, chia seeds, frozen mango, spinach, a bit of agave syrup, and spirulina. It went well with the last of a pineapple.
This was a bowl of leftovers assembled hastily on my lunch hour: Leftover rice and leek fritters with lettuce, tahini sauce, olive hummus, cucumber, tomato, and pickled onion. It was delicious, but I didn't expect anything else.
For dinner, I used the end of a batch of homemade mozzarella and some garlic Tuscan bread I had in my freezer to make this arugula and mushroom grilled cheese, served here with salt and vinegar chips.
Not pictured, I had some herbal tea, a multivitamin, a DHA supplement, and a Vitamin D supplement.
