Little Dishes #11
So here we have the pre-total-burnout meal of savory grated tofu (recipe from the New York Times), some simple Asian-style cucumber salad, rice with peas (recipe from Barefoot in the Kitchen), maple sriracha cauliflower (recipe from Kitchen Treaty), and a veggie egg roll with sweet chili sauce.
I took this photo just before sitting down to a meal I didn't end up enjoying, because I got word that my father was going into hospice in the middle of it. But as near as I can recall, this wasn't bad! I made it because I had the ingredients to use up, but also I wanted something different to do with rice for an Asian-inspired meal.
What you see next will reflect what I've been eating since I came back from the road trip I took a few weeks ago.
