Dinner Bowl #120

 


Do you ever realize, "Wow, I am having a bad time right now!" I recently realized this when I nearly started sobbing on a Zoom meeting where I was talking about some 18th century letters college students wrote to their families. I did not cry; I suspect my emotionality did not translate on screen or in my voice. Nonetheless, it gave me pause. I don't typically want to cry over complaints about difficult professors or bad dining hall coffee, especially when the people complaining have been dead for centuries.

So I paused on many things. There's a lot going on. I'm just not sure what to do about it. One foot in front of the other...

There were some  vegan chicken-style nuggets in my freezer and I needed to use a jar of pasta sauce that was open in my fridge. So thus we ended up with nugget Parmesan (made with non-dairy cheese, of course) over spaghetti noodles. I made some garlic toast and a salad and that was dinner.

To make vegan nugget Parmesan, bake the nuggets as directed on the package, then spoon some tomato-based pasta sauce on top, and add some non-dairy cheese. (Here, it was non-dairy mozzarella.) Pop that back into the oven until the sauce is hot and bubbly and the cheese has melted. Serve this on top of spaghetti noodles. If you want to elevate it a little more (as I did), first melt some non-dairy butter into the hot noodles and stir in non-dairy Parmesan, salt, and pepper.

And dinner was good, and I lived to fight tears another day, I guess!

I'm fine. Just...weird.

Honestly, I should probably make that into a t-shirt.
