ECO Lunchbox Three-in-One #77

A simple arugula salad with grape tomatoes and a lemon-mustard vinaigrette and spaghetti with Gardein meatballs and a sprinkling of Follow Your Heart parmesan.

I genuinely wish I liked arugula more--or that I liked any green leafy salad more--but this dressing was really pretty good and the tomatoes were a nice touch.

The Gardein meatballs were on sale so I decided to give them another chance. I had tried them before in early vegan days and didn't like them because they had a weird texture. Either they've changed the recipe or I got a bad batch before, because these were really great! I was pretty excited about that. Spaghetti and frozen meatballs used to be one of my favorite go-to quick meals when I didn't really want to cook. There is something reassuring about knowing you have a meal on standby, especially in the winter.

    1. It's a really good dressing! Sometime I'll give the recipe with the proper proportions, but it's essentially olive oil, lemon juice, dijon mustard, and salt and pepper.

  2. I'm not a fan of arugula (or rocket, as we call it here), but Australian cafes LOVE it. A handful of rocket on everything!

  3. I'm with you, I wish I liked greens more than I do. I can deal with cooked greens but salads are not a favorite. I have moments where I crave them but usually it's hard for me to get into them.

    I'm glad that the meatballs were better this time around! The meal looks delicious.

    1. Yeah, my aversion to raw greens makes me feel like maybe I'm a bad vegan. I should branch out to putting them in smoothies, maybe. Or accept my limitations and take my multivitamins and eat fortified foods and makes sure I get my calcium that way.

  4. That's interesting about the Gardein meatballs -- I didn't like them either when I'd tried them a couple years ago and haven't had them since; maybe I'll give them another chance just in case!

    1. If it helps, the reason I didn't like them before was an uneven texture--weird chunks of firm stuff (probably TVP) surrounded in something a bit mushy. These had a much more even texture.

  5. I just had some meatless balls for lunch today! My favorites are the 365 brand one at whole foods (frozen) or the ones from trader joe’s. I can’t remember if i have tried the ones from gardein, but I’ll be sure to now since they’re easier to find!

    1. The Trader Joe's ones are good! I don't often go to Whole Foods--maybe once a year--but next time I go maybe I'll try the 365 meatballs.
