Lunchopolis #76

Vegetable steamed buns; sauteed spinach and tomatoes; sauteed corn and peppers; an improvisational salad of iceberg lettuce, shredded carrots, and sesame seeds; and an experimental dressing for both the salad and dipping the buns into (it involved plum sauce, soy sauce, rice vinegar, and sesame oil).

I was glad I had these steamed buns in the freezer. This was not the easiest day for me. I usually would want more protein but I was doing everything I could to get anything to eat at all. The veggies were leftover from yesterday, and the salad was pretty easy to make, but I couldn't wrap my mind around much more. The buns were good, though, and I made myself a peanut butter and banana smoothie later on, so I think I'll be okay on that front.

This is all you'll see for this week. I have been missing work because of a sudden, mysterious set of debilitating symptoms (so what else is new). Catch up with you on Monday!

  1. Oh no, I'm so sorry that things have been so bad for you but the fact that you can still get in some really lovely meals is so impressive. Having things like the steamed buns in the freezer is really great for making fast meals like this. I have veggie gyoza that I'll throw in some broth with veggies and it's a great, quick meal.

    I hope that your symptoms will start to subside soon and that you have a restful and healing weekend <3

    I love steamed buns so much! Do you heat them up at work?

    1. I do heat them a bit at work in the microwave, but I've been known to eat them at room temperature.
