Lunchopolis #77

A similar salad to yesterday's: Mixed lettuces (butter and leaf), cucumbers, red onion, tomatoes, and avocado with my homemade creamy dill dressing and Bac'n bits; an Unreal crunchy peanut butter cup; pasta salad made from leftover macaroni in a cashew cream sauce (I added peas, shredded carrots, and Vegenaise, then topped it with parsley), and mango chunks.

Today I wondered whether other people get as excited about food as I get. When this avocado proved ripe enough to eat (a true splurge at $2.50 but it has been so long), I was ready to jump up and down.

I don't normally put things in packages in my lunch boxes, but I made an exception for the Unreal crunchy peanut butter cup. (Not sponsored; I may hope they see this and send me free chocolate but I'm quite certain they won't.) Unreal is not a vegan brand but their dark chocolate candies are vegan, and they have fun varieties like almond butter in dark chocolate, cashew butter in dark chocolate, or this crunchy peanut butter in dark chocolate (quinoa is what makes it crunchy). It used to be really hard to find but now two of the stores I visit regularly have it.

  2. Ooooh it all looks so good! And yes, a perfectly ripe avocado is a great joy! Just like a crappy one is such a huge disappointment. This meal looks so satisfying with lots of fresh components and hooray for chocolate! Those unreal cups are so good!

    1. Ah, the flip side. I hate cutting into an avocado and finding sadness. So I suppose I have both joy and despair that way!

  3. I get very excited by food. And the rush of cutting open a perfect avocado... oooh, gets me every time.
    I have some Unreal cups in a package a friend sent me, but I haven't tried them yet. Should get on that!

    1. I know a lot of people who think the peanut butter and chocolate combination is an Ameerican abomination, but I have always loved a good peanut butter cup. Making it crunchy like this one was someone's stroke of genius.

    2. Ummm... excuse? Peanut butter and chocolate is THE BEST COMBINATION!!! I am willing to accept that not everything is to everyone's taste... except in this case when they are clearly wrong. ;)
