Sequestration Meal #577

 


I used the protein pasta cheat again with this meal, plus there are several protein sources in the sauce (soy milk, cashews, nutritional yeast), so this worked out great. Here we have vegan Italian tomato mac and cheese (recipe from Monkey & Me Kitchen Adventures), carrots, red peppers sauteed with onions, and broccoli.

This pasta sauce recipe is so good. It does involve a lot of ingredients, but fortunately I keep a well-stocked spice cabinet. (It's actually a drawer. But you know what I mean.) I love the flavor of tomato and cream together.
