ECO Lunchbox Three-in-One #76
Brown rice salad from Going Solo in the Kitchen, some dairy-free chocolate hazelnut spread, a couple of Korean cookies (they just call themselves "traditional Korean cookies" on the package), and apple slices to dip in the hazelnut spread.
I first made this salad before I was vegan, and I don't think I've made it since I made the transition. It's pretty easy and one of the few ways I actually like eating brown rice. The hardest part is cooking the rice (which seemed to take much longer than the package claimed). You then mix the rice with a tahini dressing, shredded carrots, chopped scallion, and chopped raw zucchini. I think this is the only recipe I have that involves raw zucchini. Somehow it all works together really well.
I bought the cookies from H-Mart. I can't really describe them to you, but I love the texture. If anyone knows how they're made, let me know.

I really need to explore H-Mart more, they have such great stuff there! The brown rice salad looks delicious and you can't go wrong with apples and vegan nutella. I am a texture person too so I'm curious to see if I can find the cookies!
