Recipe: Chocolate Banana Oatmeal (Vegan)
I read several online recipes for banana oatmeal before concluding it was better for me to wing it with my own. This is a filling, high protein breakfast. It isn't that sweet because it relies mostly on the sweetness of the banana and a few chocolate chips, but you can always add a teaspoon or so of your favorite sweetener to the liquid when you're cooking it if you want.
Chocolate Banana Oatmeal
Serves: 1 generously
1 banana
1 cup soy milk (I used unsweetened, but you can use sweetened if you want it to be sweeter)
1 pinch salt
1 tablespoon cocoa powder
1/2 cup quick cooking oats
1 tablespoon peanut butter (optional)
1 tablespoon mini non-dairy chocolate chips (optional)
Blend 2/3 of your banana with the soy milk, salt, and cocoa powder. Set the other 1/3 banana aside to use for a garnish.
Bring the liquid mixture to a boil in a small saucepan. Stir in oats and cook, stirring, about 1 minute or until thickened. Transfer oats to a bowl.
Slice your reserved banana. Top the oatmeal with sliced banana, peanut butter, and mini chocolate chips.

ReplyDeleteIt was good! It was hard for me to finish the whole bowl, because oatmeal is so filling, but I persevered.
