Sometimes, I don't have too much appetite. This was one of those times. Later, I managed to have a Tofurky sandwich, so it all worked out in the end. But in the interim, I made this orzo leek and dill soup (recipe from Lucy and Lentils), figuring I needed to at least try to have something nourishing.

For a light meal, this soup was amazing. It was very simple, too, which is more my speed at the moment than the more elaborate fare you often see from me. Just onions, carrots, leeks, and garlic, cooked down in some olive oil, then some vegetable broth, thyme, and orzo. Once it's finished cooking, you finish it off with fresh dill and a squeeze of lemon. It was perfect--warming and soothing, just what I needed to tide me over until a proper appetite returned.

  1. Well done on finding something to eat that suited your appetite at the time! I have an annoying habit of just eating a 'normal' sized meal even if I'm not that hungry and then my tummy hurts.

    1. It's hard for me to eat enough sometimes, but being gentle about it does help.
