What I Ate in a Day #44

 A combination of longer days and an early dinner means I had enough light to take you through a whole day with me! It's been a while since we did this. This is a using what I have version, on a day I had to do something unusual for me.


I started my day with some banana buckwheat quinoa pancakes with non-dairy yogurt and stewed berries. You'll see more about these pancakes in a future breakfast round up. They were good, though I was still a bit hungry afterward. I needed the leftovers for later, though, so I just had a granola bar (not pictured) and some herbal tea with soy milk to round this meal out.


For lunch, I packed a typical standby: A sandwich with vegan mayo, Tofurky, non-dairy cheddar, lettuce, and cucumber on seedy multigrain bread, all alongside barbecue potato chips and some Cara Cara orange slices. I also packed an insulted bottle with hot grain-based coffee and soy milk. It was quite cold, and eating this in my car was a challenge. I was parked three blocks away from where I needed to be. I promise you I was grateful for the hot coffee!


For dinner, I had some steamed rice, Chinese-style tomatoes and "eggs" (JUST Egg and cherry tomatoes that had gone wrinkly in the fridge), and a vegan Chinese-style "meat" sauce (recipe from The Foodie Takes Flight). I garnished this with sesame seeds. Had I been less exhausted, I would have added some sliced cucumber for color and freshness, but I could not deal with life at that point, so I just added sesame seeds.

Not pictured, I followed up my dinner with my usual supplements (multivitamin, algae-based DHA, Vitamin D, and turmeric), more non-dairy yogurt, a handful of chocolate chips, some Dandies marshmallows, and some walnuts. It was dark by then, so you don't get to see it, but I promise the yogurt bowl was delicious!

On the using things front, this day's food used buckwheat, quinoa flakes, and an assortment of things in the fridge that were leftover from planned things that needed using. (JUST Egg, tomatoes, bell pepper, and green beans). I used TVP instead of vegan crumbles, which saves money, but I also always have TVP on hand, possibly more TVP than I should keep on hand.

In any case, I'm still successfully avoiding shopping, which has an overall effect of keeping my anxiety purchases in check. The stores are scary; everything is scary. Coming home to a bowl of warm Chinese food helps, somehow.
