Bentos are the best. Here we have a breakfast-like one, though I had it for lunch: Spinach and tomato tofu scramble, cucumber slices, avocado chunks, segments of a tangerine, a little cup of flaky salt (for the cucumber and avocado), and a slice of toasted multigrain-and-seed bread, cut in half.

I still pack my lunch every day, but I've shown it to you a lot less frequently of late. This may be because I'm usually having leftovers of something you've already seen, but I want to get back into pretty bentos. We'll see how that goes.

Because I packed this in a metal box, I had to eat it cold (room temperature, anyway), and that worked out fine. Tofu scramble is always a winner.

This time around, I had to buy name brand tofu because the store brand was sold out, and the unfortunate part of this is that I found the name brand tofu to be wildly superior to the store brand. Seriously, this was amazing tofu. It's about 50% more expensive, though. Why am I like this.

  1. But even brand-name tofu is less expensive/animal cruelty involved/environmentally harmfully impactful, than animal protein. Love "pretty bentos", and believe that meals should--as much as realistically possible-- be beautiful to behold, which makes a difference in the enjoyment of the meal. I also believe that there are few dishes that are not elevated with a good sauce!

    1. I've been vegan so long that I have no idea what animal products even cost! But it's weird and a tiny bit frustrating when I find the pricier name brand might actually be worth the higher price. It's like that with a lot of things, for me. I guess I have expensive tastes.

      This would have gone well with sriracha mayo, if you want a sauce idea!
