Low Bowl #35

 


I had some beans that desperately needed to be used up in my fridge, and so those, with an assortment of vegetables, some broth, and a couple of tablespoons of rice became an excellent base for simmering some fluffy dumplings.

It was unconventional, but it was delicious! Raid-the-fridge soup usually is. There is something about it that is also comforting in a different way than most comfort foods--it's something from nothing, a guard against my inflation and tariff anxieties, the promise of my own resourcefulness. We can do so much with so little when we get creative.

And so I'll keep getting creative.

Some of the most fun, interesting, surprising and tasty dishes I've made over the years have been when living in places where we could not find 'everything', and making do with what you had was how it worked. I enjoyed that challenge. This all relates to your ending comment: "We can do so much with so little when we get creative." Yes! It's very good to have to figure it out, find substitutions (or not), and use the gray cells.

    1. I'm a much more confident cook these days than when I first set forth on my vegan path, and it helps a lot. If you don't know, you don't know.

Just want to add: We who (by accident of birth) have choices, and abundance, have much to learn from those living in places where they have so little, yet create so much from what little they have. I long ago have been humbled and inspired by this, and making it sound "fun"--making do with what little one has...apologies for sounding spoiled and entitled. Those doing without are in my thoughts and concerns every day.

    1. Oh, I have choices and abundance, too! I just also have anxiety, so I find reassurance in knowing there are options even when the number of them diminishes. Things are hard and getting harder in a lot of ways, for a lot of people. The better I am at managing my own resources, the more I'll have to offer other people, in the end. Thanks for sharing your thoughts.
