This is a very basic meal: A Tofurky sandwich with homemade vegetable soup.
The soup is the kind I usually make, the raid-the-fridge variety. I cut up a variety of vegetables. I sauteed some onion, celery, and carrots, probably in vegan butter but I don't remember and olive oil works just as well. I added more veggies, broth, the end of a can of tomato sauce, some seasonings, and a bay leaf and simmered it for a while. Toward the end of the cooking time, I added some pastina to cook into the soup. And there you are. Soup.
It's better than canned soup and delicious with a sandwich or crackers. If you don't know how to do this, please learn; as life skills go, making soup out of random things will be a worthwhile endeavor nearly all of the time.
The sandwich is the peppery Tofurky slices and lettuce with vegan mayo on whole wheat bread. That, too, is nothing exciting, but it was delicious with the soup.
This meal is more than the sum of its parts!
