I never know how to plate an ear of corn, but I'm always glad to have one! With this ear of corn, I have a Wegman's Don't Be Chicken patty, some fresh steamed broccoli, and a delightful tortellini bean salad (recipe from Love & Lemons, using vegan tortellini).
Summer must come with at least some fresh corn. It's compulsory. Eat the corn! It is so good, every time.
I've been eating frozen broccoli lately, but having this fresh stuff was admittedly a lot better. Sigh. There are times when it matters that it's fresh, I guess!
My favorite chick'n is back! We're back, baby! So many good things can be had from these chick'n patties. I nearly burst into tears of joy when I saw that they'd returned to Wegmans. Fingers crossed that the Don't Be Piggy sausage also returns!
This salad, meanwhile: another wow! I am not going to apologize for how much I've romanticized this summer with all these salads full of things like marinated artichoke hearts and pepperoncini. It's been so much fun! I'm learning so much about how to make myself get excited about salad. As for the tortellini, that was pricey, too, let's be fair. But put in a salad like this, served as a side, it stretches a lot farther. I see tortellini soups in my wintery future. (It's Kite Hill, if you want to look for it somewhere near you.)
