Happy Jackson Snack Boxes #61

Peanut butter, celery sticks, carrot chips, dried cranberries, applesauce, zucchini walnut bread from It Doesn't Taste Like Chicken, and a little cup of margarine for the bread.

Believe it or not, I cut the carrot chips myself with a wavy knife I have that I very rarely use. It was a fun change of pace but it takes some practice, I think.

The zucchini bread was really nice, but I don't know why mine didn't brown much. It seemed very pale. It was definitely cooked through, just pale. But it tasted good. I halved the recipe and made two mini loaves instead of one big loaf, and on the night I made it I ate half a mini loaf all on my own.

  2. This is my perfect bento!! I love snacky meals like this and peanut butter with anything is delicious. The zucchini bread sounds great, definitely a great combination. I find that some of my baked goods are pale too, I'm wondering if it is because of the ingredient combos that we have to use. Who knows... as long as it tastes good! The carrot chips are too cute! You would get the cutest roasted potato "chips" using it too!
