Laptop Lunches #306

I almost didn't show you this, but, well, I decided to embrace my imperfections. This is more leftover tricolor rotini pasta in the creamy sauce from Vegan Yumminess, my own recipe for peas and carrots, some mashed potatoes (I did not notice until much later that only one speck of pepper showed up--no, that's not a bug, it's pepper), and some rosemary-pecan mushrooms.

It was a hard week and I had this available and went with it. It was very starchy, but I figured the peas and the pecans and the mushrooms would round it out, and reminded myself that most of what I eat is in much better balance than this.

Plus, I am a starch fiend. When my parents used to take me to Golden Corral as a child, I would get macaroni and cheese, mashed potatoes, and stuffing as my first pass through the buffet. I loved the combination. So I guess this was me aiming at a more adult, vegan version of that, minus the stuffing.

Now that I've written this, I kind of want stuffing.


  1. Sometimes, you just have to carb it up. Carbs are life! :)

  2. Starch is delicious and comforting, especially when you are not feeling well. It looks delicious and like a great meal to me! I am with you are the carb train, all of my favorite foods are starches :)
