Happy Jackson Snack Boxes #67

Interesting effects from the morning light! This is blueberry bread, some almond milk yogurt, raspberries (that's the last of them, sadly), some cranberry-pistachio white chocolate energy balls (recipe below), some margarine for the bread, and some chocolate chips to stuff into the raspberries (or just eat).

Lots of berries in this lunch! I didn't plan it that way. I don't think I planned much of anything here because I was pretty miserable. But I can highly recommend these energy balls--so many good things in them. I cut down and modified this recipe to make it vegan and to suit my tastes. It still makes more than my typical energy ball recipe would--I got about 10 out of this.

Cranberry-Pistachio White Chocolate Energy Balls
Makes about 10

10 dates, roughly chopped
3 tablespoons bee-free honey or agave nectar
1 teaspoon ground flax seeds
Pinch of salt
1/4 cup + 2 tablespoons quick-cooking oats
1/4 cup shelled pistachios
1/4 up dried cranberries
2 tablespoons white chocolate chips

Put the dates, honey or nectar, flax seeds, and salt in a mini food processor. Blend until you have a paste. Add oats, pistachios, and cranberries and pulse until well combined and the nuts and cranberries are roughly chopped.

Transfer mixture to a bowl. Mix in chocolate chips.

Carefully form the mix into balls, pressing firmly in your hands to bind. This can get sticky; it may help to wet your hands slightly if so.

Refrigerate prepared balls until firm.

  1. This lunch sounds so yummy to me! Blueberry bread sounds delicious! I don't love blueberries fresh on their own but I do love them baked into things and the bread looks amazing. The energy balls sound great too! The kosher market I used to go to for my white chocolate chips closed so I'll have to find a new source!

  3. I love berries, so a berry filled lunch sounds perfect. Chocolate chips to stuff into the raspberries is an excellent idea! I have some raspberries in the fridge at the moment, and I am definitely going to do that.
