Sequestration Meal #147

It had finally cooled down enough to have the oven on for a bit, so on a day I had close to no appetite, I broke out the cauliflower steaks. I still love Jessica Gavin's recipe, using smoked paprika. With this, I made an improvisational side of quinoa, spinach, mushrooms, tomatoes, and garlic, flavored with Mrs. Dash, soy sauce, and nutritional yeast. It was pretty great, and it would also have been great as a packed lunch.

I've been thinking about breaking out my lunch boxes even though I have no place to go, because when I put the leftovers of this away I was feeling really weird about not getting to put them into a lunch box the next day. It feels like the whole world has moved on, even though the pandemic is still raging. I have been largely okay with dinner plates all this time but sometimes it hits me in waves.

This was tasty, pretty, and light enough for me on a not-much-appetite day, though. There's not a whole lot more you can ask of a meal.
