Happy Jackson Snack Boxes #55

Cucumbers, baby carrots, celery sticks, pinto bean salad, crunchy peanut butter, and apple slices. I really like carrots and celery with peanut butter, and I was in a hurry, so I just went with something I could dip both fruit and veggies in. Someone asked when I was eating this if it really filled me up to eat this way, and: Yes. Peanut butter is very calorie dense and the rest has a lot of fiber.

  1. I love these snacky type meals! They are my favorite and you can theme them out if you want. Really great variety! The only way I'll eat celery raw is with peanut butter :)
