Apple slices with a dip I made out of crunchy peanut butter and maple syrup, pasta salad made from some leftover Annie's vegan "macaroni in a creamy sauce," and pickled beets.
I think I like the pasta salads I make out of the leftovers of Annie's vegan macaroni than I like the original meal, but the stuff still made a reasonably good side with some veggies and Gardein meatloaf for dinner.
Beets are risky (I tend to get beet juice on me) but I do still rather love them. A quandary, to be sure.

I haven't though to make pasta salad out of leftover pasta meals, but that is a really great idea. Especially as we are coming into summer.
ReplyDeleteThey usually have a lot of flavor already, so it works well! I forgot that you were in Australia so I was momentarily confused by that, but yes, it's good in summer when you don't really want to cook. (Or anytime, really!)
DeleteI agree with Susan, what a great idea to make a pasta salad out of leftovers! I've been loving my fruit with pb lately and I wish I liked beets more. They are so pretty and good for you but I just never got into them. I hope you were able to enjoy them and keep the juice off ;)
ReplyDeleteI have a love hate relationship with beetroots. I used to love them, now I'm not so sure. I did try making a beetroot chocolate cake recently that was lovely, so maybe I'm not giving those poor old beets a fair go! Those snack boxes look so cute (not to mention tasty!)
