ECO Lunch Box Three-in-One #105
You've seen something pretty similar to this a while ago, but it still works! I have here a quesadilla with non-dairy mozzarella, spinach, and mushrooms alongside some spicy sriracha white bean hummus with veggie dippers (carrot sticks, cucumber spears, and halved grape tomatoes).
Sometimes, it's just great to have something easy you can pull together without thinking too much. There's a reason this is a classic! I don't mind eating a cold quesadilla, either. It also made a great dipper for the hummus.
