Sequestration Meal #564

 


Though this is a particular favorite of mine, I haven't made it in ages: Stuffed peppers (it's a mix of TVP, rice, non-dairy cheese, tomato sauce, and seasonings), mashed potatoes, and steamed broccoli.

In a few months, I won't want to have my oven on. So while it's still possible to enjoy baking things, this was a great dinner. And it's also another colorful offering--I love eating colorful food.
