Sequestration Meal #562
This was a recipe I chose to use up my bok choy: Sesame ginger rice noodles (from Choosing Chia) with smoked tofu to balance things out and boost the protein.
It was an easy, spicy recipe that I ended up enjoying, but I'm not sure I'd want to make it again. It just didn't excite me enough to make it better than peanut butter ramen (which has a bonus of having more protein in it already). Still, it was there for me, I did not have to go to the store to get any extra ingredients, and it got me through a meal.
It looks lovely. Such pretty tofu presentation.
