10 More Vegan Breakfast Toasts (Compilation #4)

I love toast. You've seen dozens of them already, though it's been a while since I made a post of them. But there always seem to be new ways to have it! Toast can be the main dish or a side, but it's virtually always something I can look forward to in the morning when it turns up on my meal plan. So here we go with ten more of them! There are some really good savory ones alongside the sweet ones.


1. Maple Tahini Banana Toast (Nut Free, Soy Free)


This is a recipe I found on Martha Stewart's website. Although I think there was too much maple syrup--which makes this into a knife-and-fork meal with it running everywhere--it was delicious. The addition of flaky sea salt (which you see kind of everywhere on the plate, sorry, not sorry) elevated this to a really addictive combination.

2. Buttery Maple Pumpkin Butter Toast (Nut Free, Soy Free Option)


This is, on one level, hardly worth sharing, but sometimes the simplest things are best! This toast is spread with margarine (soy-based here, but you can choose something else if you're avoiding soy) and maple pumpkin butter. This was delicious as an accompaniment to an otherwise too-light breakfast that just needed a little something else.

3. Smashed Edamame Toast with Hemp Seeds and Pickled Onions (Nut Free)


This vibrant, high protein toast recipe is found at Rainbow Plant Life. I usually have edamame in my freezer, though I don't always think to use it, especially not at breakfast. But we so should. If you're like me and get into ruts, yank yourself out of that rut with this creamy, spicy green spread. It has avocado, edamame, cilantro, lime, and jalapeno for greening it up, plus tahini, soy sauce, sesame oil, and salt for more flavor. After spreading the mix on my multigrain-and-seed toast, I topped it with hemp seeds and homemade pickled onions. It was perfect!

4. Peanut Butter Chocolate Banana Toast with Hemp Seeds (Soy Free)


Here, I spread multigrain-and-seed toast with peanut butter and topped it with bananas. (That much is a staple around here.) But I elevated it a bit with a drizzle of chocolate tahini and some hemp seeds. This was so good! I would probably happily eat it for dessert, too.

5. Mushroom-Arugula Toast with Cream Cheese (Soy Free)


Every so often, I want cooked veggies on my toast. This one had mushrooms cooked with garlic, to which I added a handful of arugula and heated it until wilted. I put that on some multigrain-and-seed bread spread with commercially prepared non-dairy cream cheese. To finish it off, I added red pepper flakes, a squeeze of fresh lemon, some flaky sea salt, and some hemp seeds. It was great! A wonderful, savory beginning to the day.

6. Tofu-Cashew Cream Cheese, Maple Pumpkin Butter, and Banana Toast


I know, I know, that's quite a header. But it's delicious! I started with the tofu-cashew cream cheese from Okonomi Kitchen. I spread that on some multigrain-and-seed toast. Then, I added maple pumpkin butter, sliced banana, and a sprinkling of hemp hearts and chia seeds. This was so good; you really have to try this combination!

7. Cheesy Garlic Toast


Though this isn't a stand-alone-type breakfast toast--you'll want to eat it with something else--it's a really great way to level up your scramble-and-toast mornings! Start by lightly toasting a slice of bread, then spread some margarine on it and top that with a sprinkling of garlic salt. Add some shredded non-dairy cheese (here, Daiya's Italian blend) and a few shakes of dried parsley. Put this in a toaster oven until the cheese melts.

8. Eggy Sausage Link Toast


A normal person would probably just make a scrambled JUST Egg and brown the veggie sausage links and put the buttered (margarined) toast on the side. But as I am highly likely to put the egg and sausage on the toast as I eat it anyway (I love how the flavors combine), I decided to go with the path of least resistance. Here, we also have some chives, because they're pretty and seem uninteresting to aphids and are therefore one of the plants I can keep in my window.

9. Cashew Sour Cream and Apple Cranberry Sauce Toast


I had some cashew sour cream that had thickened in the fridge to a spreadable consistency, and also I had some apple cranberry sauce I'd made, and for some reason I had the inspiration to make that the basis of a toast. It was amazing. I had this for breakfast with a soy latte and fruit salad for several mornings in a row.

10. Blueberry Almond Cheese Toast with Agave Drizzle


You saw this cheese before with blueberries and cherries on toast (quite a long time ago); now, blueberries and agave! I had some feta-style almond cheese on hand I'd made from this recipe at Domestic Gothess, as well as some blueberries, so that was a natural multigrain toast to make. It was delicious! Just the right amount of sweetness with the agave drizzle, and great with a soy latte made from grain coffee.
