A break from rice: My own recipe for skillet pastitsio with roasted zucchini and carrots.

I used some coconut milk I had open in my fridge for the cream in the pasta, and it worked out great! I didn't find this coconutty at all. And the pastitsio recipe is so nostalgic for me. I love when I can make something I used to enjoy as an omnivore and have it be essentially the same meal, just free from animal products. TVP takes on flavors so well, it can sub for basically anything I used to make with ground meat.

I also love roasting vegetables in winter. It's so easy and the flavors are so beautifully concentrated.

Life may not always be what I want, but at least sometimes, my lunch is all I could hope for it to be.
