10 More Vegan Breakfast Toasts (Compilation #5)

I found a forgotten half-a-draft of a vegan breakfast toasts post. I wouldn't normally post so much toast right in a row, but you know what? I'm also eating a lot of toast. It's a good way to use random things. So here you are: More toast!

There are sweet things here, and savory. They were all "part of a complete breakfast," as it were; some are more complete on their own than others.


1. Checkerboard Cream Cheese Toast

Start by making this delicious cream cheese with tofu, cashews, and miso recipe from Okonomi Kitchen. Spread it on multigrain toast and top with alternating slices of cherry tomato and Persian cucumber, which will be similar in size. Add flaky sea salt and fresh-ground black pepper. Enjoy!


2. Avocado Toast with Roasted Red Peppers, Mushrooms, and Sesame Seeds (Nut Free, Soy Free)


I had some roasted red peppers I needed to use, so what else should I make but toast? Obviously, this is a toast moment. I spread a slice of wheat toast with mashed avocado seasoned with salt and pepper, then topped that with some sauteed mushrooms, the roasted red peppers, and sesame seeds. It was lovely.

3. Cream Cheese and Blueberry Chia Jam Toast


This is yet another appearance of the cream cheese recipe from Okonomi Kitchen. I topped my toast with thick layers of cream cheese and homemade blueberry chia jam. This was absolutely delicious.

4. Arugula-Tomato Salad Pesto Toast (Nut Free, Soy Free)


Have you had my arugula-tomato salad pesto toast yet? I love this stuff!

5. Tofu Eggless Salad, Avocado, and Tomato Toast (Nut Free)

I made this when I had some leftover tofu eggless salad. I started with multigrain-and-seed toast, topped with some of the tofu salad. I topped that with slices of avocado and tomato, and sprinkled it all with sea salt and cracked black pepper. It's basically like an open-faced egg salad sandwich, and it made for a great breakfast with some fresh pineapple and herbal tea on the side.



6. Maple Whipped Tofu Toast (Nut Free)

This is a recipe from Margeaux. It's an easy, straightforward recipe for tofu that is a good change of pace from your usual toast ideas! I loved how creamy and rich this came out, with it just being tofu. I didn't drizzle the top with olive oil, but I did use the recommended clementine zest and some flaky salt. This meant I also got to eat a clementine with my breakfast--a win-win! The salt really elevates it--don't skip it.


7. Salted Chocolate Granola Butter Apple Toast (Nut Free, Soy Free)

This one is very easy. I just spread some chocolate granola butter on some seedy toast, then topped that with some thinly sliced apple and flaky sea salt. It was delicious!


8. Banana White Chocolate Granola Butter Toast (Nut Free, Soy Free)

I love bananas--I love them more all the time! This banana was at the absolute perfect stage of ripeness, so it was ideal to have slices of it with some vanilla granola butter, chia seeds, and mini non-dairy white chocolate chips. This was a real treat!


9. Mixed Nut and Seed Butter Toast with Raspberry Hibiscus Preserves and Banana Slices (Soy Free)

More banana goodness from that perfect banana stage: I had some mixed nut and seed butter (this particular butter combines almonds, cashews, flax seeds, pecans, sunflower seeds, and walnuts) and raspberry hibiscus preserves in my pantry (sometimes I do get overly excited on the nut butter and jam aisle and buy more things than perhaps I should, but that's why I'm on a pantry utilization cycle). That was the basis for the toast, which I then topped with thick slices of banana. You don't really need me to tell you this, but I figured I would, anyway, because there are so many variations on nut butter, jam, and fruit on bread.


10. Thai Cucumber Peanut Butter Sriracha Toast (Soy Free)

A long, long time ago, I tried a recipe for Thai toast with peanut butter, sriracha, and cilantro I found at The Spruce Eats. This time, I added cucumber slices on top of the peanut butter, and that was genius--still delicious, spicy, peanut saucy toast, but also: with cucumber!
