Dinner Plate #22
I had other plans, but I was too tired for them, so I went in another direction: A chickpea and smoked tofu salad sandwich with cucumbers and pickled onions with vegan mayo on toasted Italian bread and some potato chips.
The sandwich filling is a recipe from Valises & Gourmandises. I loved it. It is a relatively simple mixture--chickpeas, smoked tofu, lemon juice, vegan mayo, Dijon mustard, some seasonings, scallions, bell pepper, and carrots--but it was roll-your-eyes-back-in-your-head good. The cucumbers and pickled onions added a good texture contrast, too.
I know based on readership stats that most of you won't read a post about a sandwich, but I'm posting it anyway. I loved this sandwich, and for those of you who do read it, I wanted you to have this amazing recipe.
