What I Ate in a Day #46

 My day began with the breakfast of champions: A muffin with fruit, yogurt, and a latte.

It's a kiwi, some Siggi's non-dairy vanilla yogurt mixed with peanut butter, a soy "latte" (more of a steamer) with maca and spirulina, and a savory muffin.

I was hungry again at midmorning, so I had a snack.

Toast with peanut butter and baked apples. So good.

Lunch had yet more peanut butter in it. I didn't fully realize until I wrote this blog post how much peanut butter I got through on this day.


I used up the last of my rice vermicelli in this peanut curry noodle soup. It was delicious and also used up some other odds and ends.


Dinner broke my peanut butter steak. I pulled some stuff from my freezer--leftover homemade yellow rice and chickpea meatballs with arugula and hemp seeds--doused it in some barbecue sauce, and called that dinner. It was pretty good!

Not pictured, I had several cups of herbal tea and my usual dietary supplements: a multivitamin, DHA, Vitamin D, and turmeric.

Not a bad day, if very peanutty.

  1. What a beautiful and nutritious day of food; impressive! Love the idea of baked apples to use in combo with pb--going to borrow that idea; thanks! And "Savory Muffins" are now a thing on work days.
