Jasmine rice, Marry Me lentils (recipe from Jackfruitful), carrots, and sauteed beet greens.
My reason for the beet greens is that I bought beets for something else, and needed to use the tops right away. But they were good! The carrots were nice, too, even though I didn't manage to get them in my rice cooker steamer in time and ended up having to microwave-steam them.
The lentils recipe was easy, but somehow left me feeling a bit "meh," I think because I didn't salt them enough. I understand "salt to taste" instructions, but I need someone to stand over me and force me to keep adding salt. Adding some flaky sea salt when I served it was an improvement, though. And I really enjoyed this meal!
So far as using things up, this used some sun dried tomatoes I had in the fridge, but mostly, I've accepted that I won't be able to be in full using-what-I-have mode in the same way until after the summer ends. So instead, I'm focusing on not accumulating things. It is nice to take a little break, though! I have plans for making some really fun food soon.
