Somehow, the weeks I refuse to shop and force myself to figure out what to do at home instead end up looking intentional. So! I have here a meatball sandwich and coleslaw.
You saw me have hot dogs recently; I had popped the buns in the freezer. I also had half a jar of marinara sauce and some Impossible meatballs in there, so that was what inspired me to make meatball sandwiches. I topped the meatballs and marinara with some non-dairy Provolone and some Italian seasoning and broiled that until melted. It was a perfect sandwich! I haven't had a meatball sandwich in well over a decade, but it was just as nice as I remembered. I didn't make this the way I used to order them, though (i.e., with mayo, sliced tomato, and olives), so maybe I'll try that soon.
A hot dog bun only fits three meatballs, but that's about right for my appetite.
The coleslaw is my new favorite (the vegan version of Dolly Parton's recipe). I would prefer fries with a meatball sandwich, but as I did not have such things, I used what I had. The coleslaw does go well with it, so no harm done.
Lately, I find I go grocery shopping a lot less frequently, and I'm getting used to eating down my stocks. There may be things that make me anxious and send me on a spiral that makes me want to squirrel food away sooner or later, but as for now, I'm doing okay! And also spending less, which is great.
