Lunchbots Quad #24
I was utterly exhausted on the morning I packed this, so I basically just assembled some snacks: Plum slices, a chocolate oat bar broken in half to fit in my container, some fruit snacks, saltine crackers, and a new-to-me tofu "chicken" salad I made from a recipe at Glow Diaries.
I had the tofu "chicken" salad in sandwich form and in on-crackers forms, and they were both absolutely delicious. If I used ultra firm tofu instead of extra firm, or smoked tofu, perhaps, this would be even meatier. I gave some to an omnivore who expressed shock at how much like chicken salad it was, but I also think this person has almost zero exposure to vegan food. To me, the salad was still very tofu-like in texture, but shredding the tofu and cooking it in soy sauce before making a sandwich filling out of it was a new technique, and I think it does add a lot of flavor to the tofu. Finely chopped walnuts and other texture contrasts from onions, celery, and pickles also help. I'd happily make this or something similar again!
Some days, this is all I can do--it was great that I already had the tofu chicken salad prepped!
Note: Make sure your fruit snacks are vegan--many brands contain gelatin. I prefer the Wegmans store brand, but these are Mott's--both gelatin-free options.
