Dinner Bowl #102

 


This bowl of vibrant deliciousness consists of Ethiopian recipes: Sweet potato and lentil wat (recipe from Food Blog and the Dog), kale gomen (recipe from Healthier Steps, subbing in kale for collard greens), and atikilt ruz (vegetable rice, recipe from Rayne Drops on Roses).

This was absolutely perfect on this day. It was chilly out and I was in the mood for something very wintery--though I know winter isn't here yet. Everything turned out so well here. And it's so full of veggies! Kale, tomatoes, onions, cabbage, carrots, sweet potatoes, garlic, and ginger--so good.

I suspect one of the reasons this rice recipe is one of the best things ever is that it has so much oil and salt in it, and perhaps one day I'll be brave enough to try it without so much of one or both of those things. But you know what? Sometimes, you need a bit of comfort, and there are ways to find balance, too.

This is also, incidentally, an extremely allergy friendly meal.
