Dinner Plate #47
It had been a while since I had a meal like this: Clementine segments; whole wheat toast; a Just Egg scramble with mushrooms, onions, red bell pepper, and spinach; cherry tomatoes; and avocado slices.
This is one of those easy things that turns out beautifully and makes it almost worth it to spend nearly eight dollars on a bottle of Just Egg. To be fair, a bottle of Just Egg makes the equivalent of 10 eggs, so that's about 80 cents per egg; actual eggs do, indeed, cost more, but if you think of it as a protein source rather than specifically an egg, it's not terrible. I used to buy a bottle of Just Egg nearly every time I went to the store, but a bottle used to cost four dollars. So...
But I can make a scramble out of just one "egg," when I add lots of veggies, and that's what I did here. I love a scramble with tons of veggies anyway, but having it stretch a somewhat pricey item is a bonus.
Anyway, I enjoyed this thoroughly, and I'm grateful to have had it.
