A funny thing happened on my shopping trip after returning from Oklahoma. I was in a weird head space, and when they had no folded Just Egg, I grabbed Gardein's ultimate fishless filets instead. When not thinking clearly, I sometimes just...do stuff. It was a frozen protein, after all! Just not suitable for breakfast, typically.
So I baked one and had it with homemade tartar sauce, sauteed mushrooms and onions, broccoli, and orzo risotto (recipe from A Virtual Vegan). I was sort of ready to cook, and this was an easy way to begin.
This was truly delicious! I loved the orzo, and of course I don't think you can go wrong with mushrooms and onions or broccoli. I eat it a lot less than I used to, but Gardein products hold a special place in my heart, too, for being so reliably good and easy to prep.
