Using What I Have Journal Entry #19: What I Ate in a Day #53

 I'm combining series here because I make the rules. This was what I put together as I avoided grocery shopping.



I started out with a homemade miso scallion biscuit and folded JUST Egg sandwich. The biscuit is from a recipe from The First Mess. I've succeeded in getting a lot more bang for my buck with scallions by keeping them in water in the window, and so I had some nice greenery here.

Later, I wanted a snack.


I'd been gifted some popcorn kernels, so I made nutritional yeast popcorn and some hot decaf black tea with soy milk. I've been vegan for about a decade now and this is the first time I've made nutritional yeast popcorn. I'm not sure it's my favorite, but it is tasty and I might well make it again under similar circumstances! And I love popcorn, so saying it's not my favorite way to have it isn't saying a whole lot.


For lunch, I made a pizza to clear out the fridge. I had some homemade ricotta left over from my lasagna experimentation, so I had that as the sauce with a little olive oil underneath, and I topped it with mushrooms, peppers, onions, garlic, spinach, and a bit of shredded  non-dairy cheese. I fully believe at this point that you can make a pizza out of virtually anything and it will still seem like you meant to do it. This was great!


I had a hamburger bun in my freezer, so I thawed that to have on this sandwich. I used up the end of a head of lettuce, the last of an avocado, some onions, Field Roast roasted tomato slices, and Vegenaise on the sandwich. I grabbed a small bag of chips to have with it. And there you have it: Dinner!

Not pictured, I had my usual supplements with this, along with a few more I was taking to deal with an autoimmune thing that popped up, so that included a multivitamin, Vitamin D, DHA, turmeric, a vitamin-based migraine prevention tablet, tart cherry, quercetin with bromelain, Vitamin C, and Vitamin E. (You probably do not need nearly that many things, so please check with your doctor before following my lead on that.)

This is not a perfect day of food by any means, but it wasn't bad and I will live to avoid going to the store another day. It's unclear how things will shake out these days, but at least there are things I can do to help with the feeling of things careening out of control.

And maybe the most significant things I have are my own resourcefulness and creativity.
