Skater Lunch Box #49

Pickled beets sprinkled with dill and a casserole I made out of the odds and ends left in my kitchen.

Making this casserole made me feel like I'd achieved some sort of next-level veganism, because I just improvised and it was great! It has the last bit of peas and carrots I had on hand, some brown rice I had left over from this week's salad (I never can make just enough for the recipe), the rest of the pasta sauce I'd made, plus the following extras: Onions, red bell pepper, celery, mushrooms, Beyond Chicken, and some Daiya pepperjack. It was delightful.
