Thermos 3-Tier Bento #22

Long Island Vegan's broccoli corn casserole, some mushroom rice pilaf from a mix (I added more mushrooms to improve matters a bit), apple slices, and a peanut butter dip I made (very easy: just crunchy peanut butter mixed with bee free honee, though maple syrup would do just as well).

The broccoli corn casserole is very unusual, but good! I was glad to have the oven on for a while when I made it because it was such a cold day. I'm wondering if my bag of broccoli florets was smaller than intended, though, because I don't think mine looked like it had quite as much broccoli as hers did. (I'm not going to complain. I mean, that just means more stuffing and creamed corn. Who doesn't love stuffing and creamed corn?)

Making this recipe got me thinking about a squash and stuffing casserole I used to make. I think I could veganize it, though I'm not sure. But I'm going to try!

  1. Yay, I'm so glad you tried it and enjoyed it! It is definitely unusual but it comes together well. We use a large bag of broccoli so that may be the difference. I just copied the recipe as it was given to my mom but I think she adds extra broccoli! The mushroom pilaf sounds delicious too!

    I would love to see your recipe for the squash and stuffing casserole, I bet it is delicious!

    1. The squash casserole certainly used to be delicious! It sounded insane to combine all that was in it, but it turned out just fine.

      I think my store only sells broccoli in 10 oz. bags, or maybe a pound? Anyway it seemed not quite right somehow when I mixed it up, but it was okay in the end.

    1. The rice pilaf is just Near East brand mushroom rice pilaf I got on sale for half price and added a few sauteed mushrooms to. It's an easy way to make myself feel like I'm actually cooking.

  3. That casserole sounds like a great comfort food meal. As a household of one I don’t make casseroles very often but i think that needs to change!
    I have an apple with nut butter nearly every single day. Maybe the world’s most perfect food pairing ever.
