Traveler's Lunches #13

Vegetable fried rice with vegetable dumplings and a homemade dipping sauce. These were the frozen vegetable dumplings I bought from H-Mart that have tofu in them. It was a really satisfying meal. I kind of miss the egg in fried rice, though, and I'm wondering if a bit of tofu scramble would help replicate it. What do you think?

  1. OMG this looks so delicious! H-Mart is such a treasure, I really need to get back there. I've been craving spring rolls like crazy. Tofu may definitely be a good replacement, especially if you can get your hands on a little black salt. I've found that all the egg scramble substitutes out there have been disappointing and WAY overpriced so tofu may be the way to go.

    1. I love black salt! It's one of the few things I let myself buy online when I couldn't find it anywhere locally (and after accidentally buying actual BLACK salt, which tastes of charcoal rather than sulfur--and feeling dumb later).

  2. Nice!! There’s the most amazing japanese fried rice at trader joe’s that is vegan and it has some tiny chopped bits of tofu in it- i always add more- as well as some seaweed in it which is really tasty.
    And of course dumplings are always a yes.

    1. I love that stuff! But I thought it had edamame and not tofu? I'll have to look at it again next time I make it to Trader Joe's. It's good fried rice but it isn't MY fried rice, you know?

  3. I tried using some chopped up cooked follow your heart vegan egg and added it to some fried rice a while ago, it was just kind of meh. Tofu is the way to go, I reckon!
