Skater Lunch Box #64

Mashed potatoes, a Beyond Sausage bratwurst sauteed with peppers and onions, and brussels sprouts (from frozen).

Continuing last week's theme of not going to my usual grocery store, I had some reason for needing to to to Wegmans (I can't remember my exact motivation, but I think it was to get the pepperoni you saw yesterday). My Wegmans is selling Beyond Sausage now! I got some bratwurst to try. It's really good! I don't think you'd fool a meat-eater the way you would with a Beyond Burger, but it would make for an excellent thing to bring along to an omnivore's cookout.

I don't think frozen brussels sprouts taste quite as good as fresh but I picked these up on sale long ago when they were all of $1/bag and they are definitely worthwhile for that price.

A tip for the chronically exhausted: You saw the potato salad I had a few days ago? Well, I boiled the potatoes for that while I boiled the potatoes for this. One half got the mashed potato treatment and one half got turned into salad, and I got to eat two different things that were still largely part of the same effort.

Because Beyond Sausage is gluten free, this also happened to be a gluten free meal.

  1. I am hopeful that the sausages will follow the Beyond Burger and that we will be able to get them here soon. I would like to at least try them once!

    1. They're good--not quite as meaty as the Beyond Burger yet still somehow meaty, and much more so than, say, Field Roast sausages. I find this hard to describe. I think it's a texture thing.

  2. I'm so curious to try the Beyond Sausage now! I tried the beyond burger just this week, as you know, and it was good so now I need to try that! The meal looks great. Great tip for the meal prep. I really really need to start getting better about prepping and feeding myself better because I now have even less motivation to do much of anything. I had no idea the Beyond Sausage was gluten free, that is good to know.

    1. I don't know how they get it to hold together without wheat gluten, and I would love to see a Mr. Rogers-style factory visit to learn more. Meal prep can be tough but I really do try.
