Monbento Original #35

A quesadilla made from Violife mozzarella and some hot sauce, sliced scallions, homemade cashew sour cream, avocado chunks, black olives, and Mexican rice made with pinto beans.

Happy St. Patrick's Day! I realize this isn't very on-theme for the holiday, but it does have green in it. (And I also ate it a week ago, so...)

I'm doing okay. Not great, but okay. The governor closed everything in education, so we're all home now, probably for about 8 weeks. I don't think I have food to last 8 weeks, but I am assuming they won't abruptly close grocery stores without warning. So here we are.

Though this wasn't my intent originally in choosing this, I would point out that the Mexican rice/beans/tortilla meal is one of my favorites when I don't have a lot of groceries on hand.

  2. Catching up on things after a few days, but this is a very good meal and beans and rice are excellent foods to keep us going.

    1. I'm just glad I bought a lot of rice just before people started panic buying. People bought all the rice like they bought all the toilet paper. It was crazy.
