Sequestration Meal #220


(No, I didn't eat this entire casserole at once, but casseroles often look better in the dish.)

I'm back from my little hiatus! Hope everyone is doing well.

This was a pizza macaroni casserole. I got the idea from this omnivore recipe, though I veganized it and added a bunch of veggies. My casserole consisted of macaroni mixed with marinara sauce, spinach, mushrooms, onions, garlic, bell peppers, and halved Yves veggie pepperoni, which I then topped with Violife mozzarella, more Yves pepperoni (whole for the pizza effect), Violife Parmesan, garlic powder, and Italian seasoning and baked for about half an hour. 

I really like this idea, but I should have layered some cheese inside rather than just putting it on top. Live and learn. The leftovers were improved with reheating with a slice of non-dairy cheese melted into them.

    1. I can't claim to have invented it, but it is good if you're too lazy to make pizza crust (or just want a change).
